I’m dreadful at remembering to photograph my meals before we devour them so no pics this time.. you’ll just have to take my word for how good this is 😊
3/4 lb. sausage, browned (I used our homemade frozen ground sausage but the Jimmy Dean Original brand would be fine too!)
1 and 1/2 cups dry penne pasta
1/4 cup fresh-chopped onion
1/8 cup butter
1/8 cup flour (freshly-ground flour or whole wheat flour is fine to use here!)
1/4 tsp. salt (I prefer Himalayan pink salt)
1/8 tsp. freshly-ground pepper
1/2 tsp. Italian seasoning (boughten or your own homemade Italian seasoning mix)
1 and 1/2 cups milk (raw or pasteurized, whichever you normally use at your house!)
2 cups freshly-grated whole milk Mozzarella cheese, divided (One brand we love is the Galbani Italian-style whole milk mozzarella, found in pretty much any grocery store!)
Cook pasta in lightly-salted boiling water until al dente. (Do not overcook as the pasta will continue to cook as this bakes in the oven later!) Drain and combine with cooked sausage; spread in greased 9x13” pan. Sauté onions in butter. Stir in flour, salt, pepper, and Italian seasoning. Gradually add milk, whisking continually. Cook until thickened and bubbling.
Stir in 1 cup of the mozzarella cheese. Remove heat when barely melted. Pour over mixture in baking pan. Top with remaining Mozzarella. Cover and bake at 375* for 20 minutes. Bake uncovered for another 15 minutes. We love the cheese golden brown and crispy-ish so sometimes I stick it under the broiler for abit to acquire desired results! Serves 5-6.
